Lets Bake A Cake - Scones


Ok, technically not a cake but never mind!

I woke up this morning absolutely full of cold and with a raging hunger. I was flipping through an old cook book at my mums house, saw a recipe for scones and decided I had to have them right away!
 I left the boy watching the rugby and busied myself in the kitchen. If I wasn't feeling so rubbish I would have made them gluten free but I just didn't have the patience - I wanted comfort food and I wanted it now - I'll just deal with the consequences later!

Makes 8

Ingredients:
8oz self raising flour
Pinch of salt
1tsp baking powder
1.5 oz butter
150ml milk
1 egg

Method:
Pre-heat the oven to gas mark 7.
Sift the flour and baking powder into a bowl and add the salt.
Rub the butter into the flour until the mixture resembles fine breadcrumbs.
Add the milk and stir until you have formed a soft dough.
Roll out the dough on a lightly floured surface to approximately 2cm thick.
Using a 6cm wide cookie cutter, cut 8 scones from the dough and place on a greased baking tray.
Beat the egg and brush it over the top of each scone before you put the tray in the oven.
Cook for 10 minutes, or until the scones are risen and golden. Serve warm with jam and cream of your choice.


I've eaten two so far and can safely say I will be going back for more!
