Let's Bake A Cake! Dark Chocolate & Cherry Muffins

 
Today is mine and the boy's three year anniversary!

We're going out for a lovely meal tonight so I've been to the hairdressers, done my nails and have smothered myself in fake tan. He's off getting a tattoo so while I had some time to myself I decided to bake his favourite muffins - dark chocolate and cherry flavour!

This is a modified Nigella Lawsen recipe - once you have the basic muffin recipe you can throw any yummy fruit or chocolate of your choice in.
Here's the recipe:

Makes 12.

Ingredients:
300g plain flour
2 tsp baking powder
150g golden caster sugar
1 egg
1 tsp vanilla extract
225ml milk
50g butter
100g cherries
110g dark chocolate
Muffin cases

Method:
Pre-heat the oven to 200/gas mark 6. Line the cake tray with paper cases.
Half the cherries and chop the chocolate into large chunks.
Sift the flour and baking powder into a large bowl. Stir the sugar into the flour mixture.
Melt the butter in a microwave for about 30 seconds.
In a separate bowl crack the egg, whisk in the vanilla extract, milk and melted butter. Stir the liquid mixture into the dry mixture.
Fold in the cherries and dark chocolate using a metal spoon - be careful not to be too rough as the cherries will be easily damaged.
Cook for approx. 30 minutes or until the muffins are risen and firm. Best eaten warm but be careful for hot chocolate!
